See recipe and a bonus recipe below. These are both super easy and my three boys always have lots of laughs helping me "roll balls" and eat the "dough" too...
2 cups shredded coconut
3 cups powdered sugar
1/2 cup melted butter
1/4 cup crushed almonds
1 bag semi-sweet or dark chocolate chips
In a bowl, mix coconut, powdered sugar, melted butter, and almonds together in a bowl. Roll into small balls, place on a cookie sheet, and chill in fridge for at least an 1 hour. TIP: make small balls, because they will get bigger after you roll them in chocolate. I let them chill over night.
Melt chocolate chips in a double boiler. If you don't know how to do this, which I'm new to it too. I have a pan that sits in another pan to make a double boiler. Or known as one pot over another pot. All you do is boil some water in one pan, I fill about halfway, let it come to a rolling boil for a few minutes, and the key is to remove the pan from the heat. Then place the upper pan over the pan with the boiling water, add your chocolate chips, and stir until melted. It makes the perfect smooth and glossy, melted chocolate for this. Roll or drizzle balls in chocolate, place back on the same cookie sheet, and chill in fridge or they freeze great too! I double the recipe to give as gifts or to take to potlucks. They're a HUGE hit!
Bonus Recipe: Chocolate Peanut Butter Balls
18 sheets of graham crackers, very finely crushed
2 cups creamy peanut butter
3/4 cup butter, softened
3 cup powdered sugar, sifted
1 bag semi-sweet or dark chocolate chips or melts
Follow the same process as above. In a bowl mix the graham crackers, peanut butter, butter, and powdered sugar together. Roll into small balls, place on cookie sheet, and chill. Melt chocolate, dip balls in chocolate, place on cookie sheet, and chill. Super easy and super fun to do with the kids. Enjoy! Happy Holidays from our house to yours! ~Kim
